A perfect recipe of dhaba style this baingan bharta. People love to eat dhaba style food and now you can easily make this at your home in your lunch and dinner. You can serve this with rice and roti. A perfectly roasted eggplant or baigan on gas stove and fully mashed and cooked with tomato and onion taste simply wow. See the recipe below.

Ingredients
- 1 eggplant
- 1 Capsicum
- 4-5 garlic cloves
- 1 cup onion chopped
- 1 cup tomato chopped
- 2-3 green chillies chopped
- 1 tbsp garlic chopped
- 1 tbsp ginger juilenes
- cumin seeds
- butter
- Salt
- Red chilly
- Turmeric
- Garam masala
- dry mango powder
- Fresh Coriander
- lime juice
- 1 cup potatos boiled, mashed

Instructions
- First apply some oil on eggplant and capsicum.
- Insert garlic cloves into it.
- Roast this on burner for 3-4 minutes
- Let it cool down and peel the skin.
- Mash it with your hand
- Heat the oil in non stick pan, add butter, cumin seeds, ginger, garlic, green chillies.
- Saute it for few seconds, add onion and tomatoes.
- Add all the dry spices and let it cook on high flame for 3-4 minutes.
- Add boiled potato, egg plant, capsicum mixture, fresh coriander and butter.
- Cook it on high flame for 3-4 minutes.
- Sprinkle some lime juice
- Garnish it with fresh coriander, tomato and onions.
- Serve hot.
