Sour and creamy mexican enchilada
Try this delicious enchilada recipe at your home. Enchilada is a mexican cuisine and creamy and sour in taste. Preparing enchilada is a long process as we have to prepare many servings but the final result will be breathtaking. It consist different steps like preparing creamy dip, tomato salsa, paneer and capsicum stuffing and tortillas. Enchilada is a complete meal which you can serve in breakfast, lunch and dinner. Instructions
  1. First make a dough for preparing tortillas
  2. Allow it to rest for 25 minutes.
  3. After that make a thin chapati and cook it on a very low flame on tawa.
  4. For making stuffing heat the oil in a nonstick pan and cook all the ingredients like onion, ginger garlic paste, capsicum and paneer by adding salt and chilly flakes for 1-2 minutes.
  5. For making salsa, first roast the tomatoes on a gas stove and peel the skin.
  6. Coarsely churn them in to blender after that mix all the remaining ingredients.
  7. For making dip, mix all the ingredients in a bowl.
  8. In a next step take a tortilla sheet and put the stuffing and roll it.
  9. Now its time to assemble everything for that first take microwave safe plate and set a layer of salsa.
  10. On salsa put to tortilla rolls and drizzle some oil on it.
  11. Pour cream dip and mozzarella cheese on it.
  12. In last sprinkle some oregano and chilly flakes
  13. Keep it microwave for 3-4 minutes until cheese gets melted
  14. Serve hot.
