Raj kachori is famous chaat item. It is a street food and people love to eat this. This is basically a crispy kachori made from all purpose flour and sooji, which is filled with boiled potatoes, chickpeas and any stuffing of your choice. Curd and both green and tamarind makes it more delicious. In short this is the combination of so many tastes in one kachori. Try this recipe at your home. It is also a good option for parties at home and when you don't have the feeling to have proper lunch and dinner. See the recipe below

Instructions
  1. Mix maida, sooji and baking powder in a bowl and prepare a tight dough
  2. Allow it to rest for 30 minutes
  3. After 30 minutes make kachori and deep fry in to hot oil.
  4. Let all the kachoris cool down then make a dent in the center and fill it with chickpeas, lobiya, carrot, onion, boiled potato. Drizzle curd and chutneys on it.
  5. Garnish it with namkeen, pomegranate and fresh coriander Note: you can take any stuffing of your choice.

Ingredients

For kachori

  • 1 cup maida
  • 2 tbsp sooji
  • 1/2 tsp baking powder

For stuffing

  • Curd
  • Tamarind chutney
  • Pudina/mint chutney
  • Namkeen
  • Chopped onion
  • Chopped carrot
  • Boiled chickpeas
  • Boiled lobiya
  • Papadi
  • Pomegranate
  • Fresh coriander and green chillies
  • Jeera powder
  • Chaat masala

Preparation

  • First mix maida, sooji and baking powder in a bowl and prepare a tight dough
  • Allow it to rest for 30 minutes
  • After 30 minutes make kachori and deep fry in to hot oil.
  • Let all the kachoris cool down than make a dent in the centre fill it with chickpeas, lobiya, carrot, onion, boiled potato.
  • Drizzle curd and chutneys on it.
  • Garnish it with namkeen, pomegranate and fresh coriander
